When I am painting with oil paint I create a color palette of the colors that I am going to
use in the painting and then use those colors (more or less) in the painting.

Is there a way to create a color palette similar to the Brush selection
palette but with squares of color?

One way of doing this is simply using an area of your canvas. You can also try Ilya Portnovs branch, it has a color palette tool.
